What does "delicious" mean to you?
Each of us has our own "delicious"—and every one of them holds a story.
Memories of laughing over a meal with someone. The taste that comforted you on a quiet night. Time shared with someone dear. There may be joy and delight there—or perhaps a touch of melancholy or sorrow.
it is part of life itself.
That is not just a phrase—it is where I began.
Once, I watched fruit that would have been discarded become beer—reborn.
What was called "waste" became someone's "delicious" and brought smiles. In that moment, I knew.
At the same time, I wondered.
With so much good in the world, why doesn't it reach everyone?
Why doesn't it reach the people who need it?
Abroad, I learned something else: fruit is a gift from the earth.
In Japan, fruit is grown with care and presented with beauty—born of growers' effort and deep respect for craft. In other places, fruit is also the daily nourishment that keeps life going.
Neither is "right"—each land has its own meaning of food. Touching both, I feel this strongly.

I also grew proud of Japan's fermentation culture—the wisdom and skill within. Yet that value still hasn't fully reached the world.
Many people still lack access to health.
Health, environment, the future of food—it could all be simpler.
"Self-denial" alone doesn't bring happiness.
So I took up this mission and founded Delicious Revolution.
Through plant-based lactic acid bacteria—an invisible force—we bridge nations, cultures, and environments, bringing health habits anyone can sustain.
Wherever cultures and cuisines differ, fermentation quietly, surely connects people. I have seen that possibility with my own eyes.
Fermentation taught me: we give new life to what people throw away.And I want to pass this on to the next generation.
